Smoking Meat

Anyone have a good kind of sweet bacon cure? Am looking to try my first pork belly :yum:

Did a brisket flat the other day. Came out pretty good. Tried a trick I read about where you coat it in mayo to help keep it moist. It worked, but kept the outer edge from getting a bark.

When picking out a garage fridge, it is imperative that the BBQ pan has a shelf specific for it.

This shelf has to be in the perfect spot to clear all the crap built in to the door.

I can fit two of these pans on this shelf when needed. One pan can fit two briskets.

Ribs for dinner.

That’s as far as that door will open. Gotta slide a pizza box in diagonally to clear the drawers, and I can’t move the shelves because the door won’t open enough.

What’s messed up is that wall was added, it doesn’t even go all the way to the ceiling. It holds that outlet at elbow height, and that’s it.

I have the same issue with my refrigerator being next to a wall since remodeling several years ago.

I raised it as a problem with my wife before any of the construction was started, and she assured me “it will be fine”.

I have refrigerator on top and freezer on bottom, and half of the freezer is basically unusable since the door only opens about 45 or maybe 60 degrees.

I don’t have to listen to any complaints about it though.

Our second house had one of those walls right next to the fridge. We have a French door style. The door with the ice maker wouldn’t open up far enough to pull the ice container out.

That would be something I would do haha

I made a smoker out of left over odds and ends.
Old bowler trailer axle
Old house pellet stove altered and converted.
Old fuel drum from orchard.
You can burn pellets or wood it has a trap door on the end.
It’s all insulated and sheeted in 6061.



This was pre V1 days so I really could have done quite a bit of things better but it’s fun and works great.

Tim and Barry, those kind planning/design issues are unfortunately very common when landlords hire bottom dollar contractors, or worse even a landlord DIYs the job with no prior experience. Worst case, a good pro installer may get lazy and forgetful, and decide to just “recycle” some old MDF baseboard if they get stuck missing a piece of filler, lol.

Awesome seeing the bbq action! All my friends pretty much have treagers, a few have greeneggs as well. I just have a giant propane grille… it’s nice and gets really hot, but I think it would be fun to setup an offset smoker with modern sensors/controls.

I love my Oklahoma joe offset smoker. I have a digital probe i stick in the meat and just keep feeding the firebox as needed. Leave the exhaust wide open and use the inlet to control the temperature. Comes out perfect. Just my two cents…
