I build my house out of SIP’s (Structural Insulated Panels) and it is amazing how rigid 2 sheets of OSB with foam between them is. We had a damaged piece that was 8’ long and only 16" wide that two adults could stand on with no problem.
I think the thinnest panel they make is designed to have a 2x4 as a spline to hold them together, so that puts it at 4.5" thick. Of course, you can’t run down to your local big-box store and buy a 5’ x 10’ SIP, but the factory is only about an hour away from me.
Not quite sure what you are referring to here. I don’t see anything in the linked document (maybe I’m blind), and I can’t think how the thickness of the table would be an issue,.
