Basic 1x6 pine board or presized pink foam with text that is cut into it around the outline of the letters at only one depth of 5mm. Easy. fast.
Another option is a school logo. Those tend to be both easy to find and simple.

Beginners and the impatient should always do a coaster. Then put it on your desk and remind yourself you have skills whenever you think you don’t. Stools are also great for sitting on while watching your machine.
Intermediate is a box. It could be for jewelry or just a special set of calipers or a nice pen.
Another intermediate project is interlocking furniture. Anything that has to fit several joints at once. That will get you making accurate and square parts.
Advanced would be a topo map. Thise things take a surprisingly long time. Inlays are also fickle and are an excellent skill to upgrade your shop.
A beginner‘s project would be a sign for your door for instance.
Boxes as an intermediate project I agree with, though Jeff did not specify. I am talking about small boxes you cut from one piece of wood.
Inlays are really advanced. Also, the moment you think you‘ve got the hang of it it‘s going to go horribly wrong…
