Before I go down a rabbit hole, does LinuxCNC on a pi4/5 work with the Jackpot nicely?

I can not say for sure but I don’t think so. I thought linuxCNC was only a real time OS?
LinuxCNC is a motion controller that runs on Linux (in your example, on a Pi 5) and provides a lot of tools.
FluidNC is a motion controller that runs on an ESP-32 (On the Jackpot) and provides tools to operate the machine.
They’re pretty much doing the same job. You only need one or the other.
