You can. On the Settings tab → ESP3D Interface → Macros. You can specify the Key for macros. I assume you could create a probe macro and assign a key to that as well.
I didn’t go that far, but this is what I did:
While V3 isn’t fully recommended yet, I’ve been messing around with it. I saw that it has a keyboard control option. So, I bought one of these (1/8 inch endmill for scale):
