I must admit that I worry that chats would end up very difficult to find important information. I love that the forum is a trove of information. However, I do understand that it would be a cool casual way to interact on random stuff. Then again, I also really like the spontaneous threads like (which can be separated off and not interfere with the serious stuff):

Back on prime day 2 a-holes talked me into spending money on a Sous Vide . Tonight I used it for the first time to cook some Ribeye’s. While I think they were far from as good as they could have been, they were still real good!
So in light of the Smoking Meat thread, I figured why not start a Sous Vide thread!
I need all the tips and tricks. What’s good, what’s not. Hit me with it all!

Picked up a new BBQ pit a few weeks ago. This one is a pellet grill. I wanted something I could use during the week since my propane grill went out years ago. This one is also a lot smaller than my offset smoker, so it’s cheaper to run if I just want to smoke enough for our immediate family.
This one is the Pit Boss 820Pro that Lowe’s sells.
So far I’ve used it for pork ribs (first cook, came out ok… needed more practice), hot dogs, Boudin, chicken wings, and chicken leg quarters. I’ll be doin…
