Sure, totally possible to scale up 3d printers to that size, with caveats. Some commercial stuff out there, try searching “large format 3d printer”.
Print times get very long as you’ve already considered, though. Not to mention filament consumption speed!
1.2mm seems to be a go to nozzle size for large format.
That said. Not sure 3d printing is necessarily the right tool to start with given you’re effectively looking to produce 2.5d (ish) parts and detail quality doesn’t matter. CNC is probably a better fit depending on what your specific designs are.
