Doing my first build! I installed Z-stop V1 no problem but I can’t figure out where the Z-stop MV1 goes. I’m assuming one is a top end limit and the other is a bottom end limit.
Any advice or pictures would be great!

Yep. You home Z upwards and then z=0 is set on the topside of your material either using a probe or just jogging it down till touching.
I have so much to learn! This is going to be fun!
