Smoking Meat

Sort of. I shredded the pork in the same container right into the juices.

I went hunting for some pork shoulders or butts couldn’t find a good one.
So for mothers day I’m cooking a 10 pound pork loin just like I do my pulled pork in my 85 gallon drum.
Any one else cooking for mothers day?

I didn’t smoke anything for mother’s day. I made my wife Lobster Mac and Cheese. I was dumb and didn’t read all the reviews on the recipe. Very first review was that it was salty… ours was salty :frowning:

I wish I knew what I did with the recipe the last time I made it. It came out really good.

We did grill steaks for dinner Saturday night. They came out just about perfect.

I did rib eye sous vide with baked potatoes and a ceasar salad. Pretty mundane really. :slight_smile:

Nice. We have family coming to dinner on Saturday. I pulled a 16lb brisket out of the freezer last night to smoke. Pictures to come :slight_smile:

My neighbor just gave me some Elk…he had some Antelope in there as well??? Going to be one heck of block BBQ when Cali allows us to hang out again. Might have to give this thing a sample grilling before then.

It’s been a long time since I’ve had elk or antelope used to guide in Montana 30 40 years ago and nothing better

I imagine Ryan as the guy in the top-left, Tim as top-right. Both with eyes on the prize, one eager to try something new, the other confident in his knowledge of what’s about to transpire. The other two are lookouts for Greenpeace and PETA.

The brisket came out pretty good.

Had a hiccup with the Pit Boss at around the 18-19 hour mark. It seems the ash cup had filled up enough that the flame went out. The controller kept feeding pellets into the cup and then they suddenly lit and the temp shot up.

By that time, the FireBoard had already woken me up because of the low temp on the pit. I was out there screwing around with the pit when the pellets lit back up. Not sure what was going on, I turned everything off and finished the brisket off wrapped in foil in the oven.

The 16# brisket took 22 hours. at ~225F.

I also learned that my Pit Boss’ temp probe runs about 25F low compared to what the FireBoard reads. With the temp set at 200F on the Pit Boss, it ran at ~225F. 225F setting ran at about 250F. Typically, when I smoke a brisket, I run it at 250F on the Pit Boss, meaning I’m smoking closer to 275F.

I don’t think I’ll try to run the pit so slow anymore. 1, I couldn’t tell any difference in the taste or texture of the meat. 2, cooking hotter means the meat’s done sooner.

I’ve been thinking of getting a pellet cooker.
I had a stick burner but time spent tending to the fire vs quality of the meat was not worth it to me.
Found plans online for a UDS (ugly drum smoker) and never looked back.
I went from a 55 gallon to an 85 gallon salvage drum.
Brand new was $100.

Memorial weekend I cooked 4 racks of baby backs and a prime rib.
Everyone was full that day!

Tim, you will be very happy with the Pit Boss they are really good smokers.
I will try to be short…
I have friends that have PitBoss and some have Traeger and I have tried “BBQ” from both of then. Can’t really tell the difference (not the same “meet or cooking style”)…

I endup getting a Traeger Ironwood 885 because of the extra perks like pellet sensor, wifi setting and monitoring.
You will love your smoker and I can’t wait to see what you will cook in tit!!
Now, you need to yourself a pair bear claws…
Yesterday a buddy drop off my set of bear claw from a group order, 37 orders.!
I didn’t wanna the wood holder as I could make my own but they order me one anyways…
