But only 10" of cut depth, the rest could be done as a drop table that would make keep most of the structural stress in the table, right?

How deep total are you planning to cut? If you’re cutting all the way through a two foot thick piece of foam, the endmill has to be able to reach more than that. Otherwise the uncut parts might get in the way of the gantry. I’ve run into this issue on my small mpcnc. Tried cutting out a relief that was deeper than the endmill and the Z assembly crashed into it.
